CHICKEN-less nuggets
If you've been searching for a plant-based alternative to fast-food nuggets that won't leave you feeling weighed down, this recipe is for you.
One of the best things about these Chicken-less Nuggets is that they aren't greasy at all! Baking them gives you a wonderfully crispy outer coating without any added oiliness. They are packed with wholesome protein, simple to whip up, and taste amazing whether served warm right out of the oven or cold as a meal-prep snack.

Equipment Needed:
Food processor
Ingredients
1 can chickpeas, drained and rinsed (240g)
1½ tbsp nutritional yeast
1 tsp garlic powder
1 tsp onion powder
2 tbsp brown rice breadcrumbs + 15 for coating, pick tbsp or g
Salt to taste
Instructions
Preheat your oven to 200°C/400°F. Line a baking tray with parchment paper.
Add the chickpeas, nutritional yeast, garlic powder, onion powder, 2 tbsp breadcrumbs, and salt into a food processor. Blend on high until completely smooth.
Scoop out portions of the mixture and shape them into nugget forms using your hands. Roll each piece in the remaining 15g of breadcrumbs to coat evenly (this recipe makes around 12 to 15 nuggets).
Arrange the nuggets on your prepared baking tray. Bake for 35 to 40 minutes, flipping them over halfway through to ensure an even, golden crunch on both sides.
Serve warm or cold alongside your favourite dipping sauce.
