Guacamole with a twist

Welcome back to the blog! If you are looking for a way to boost your daily protein intake without sacrificing your favourite dips, this high-protein twist on traditional guacamole is about to become your new go-to.

By blending vibrant edamame beans into a creamy avocado base, you get an extra pop of colour, a fantastic velvety texture, and a massive protein upgrade. It’s light, refreshing, and pairs perfectly with oil-free chips or fresh crudités for dipping.

Servings: 1

Macros (per serving)

348 kcal, protein 18g, carbs 24g, fat 23g

Ingredients:

  • 125g cooked edamame beans

  • 1 medium avocado, stone and skin removed

  • 2 tsp lemon juice

  • 1 garlic clove, minced

  • ¼ tsp ground cumin

  • 1 large tomato, finely chopped

  • 2 tbsp fresh coriander, chopped

  • ¼ red onion, finely chopped

  • Salt to taste

METHOD:

  1. Add the edamame beans, avocado, lemon juice, minced garlic, cumin, and salt to a food processor. Blend on high until smooth and creamy.

  2. Transfer the mixture into a mixing bowl. Gently fold in the finely chopped tomato, fresh coriander, and red onion until well mixed.

  3. Scoop into a serving dish and serve immediately alongside oil-free chips or crisp fresh veg.
