Chocolate Peanut Butter Fudgesicle Recipe

Today, we’re whipping up a treat that you can enjoy on those scorching Summer days without compromising your health. Here’s another delicious Hench Herbivore recipe that’s not only extremely easy to make, but it’s also packed with healthy ingredients that taste amazing and fuel your body too.

The secret ingredient to making these fudgesicles so creamy is… sweet potatoes (I know, right?!?). Stay with me: once peeled, their lovely, fibrous flesh combines perfectly with the sweetness of dates, the rich flavour of peanut butter, and the chocolatey goodness of cocoa. Trust us, you won't even taste the potato, and it creates a luscious texture.

Sweet potatoes are nutritional powerhouses, boasting a wealth of vitamins and minerals. They offer a good dose of both soluble and insoluble fibre, supporting healthy digestion and keeping you feeling full. Plus, they're an excellent source of vitamin C, potassium, and beta-carotene, a powerful antioxidant that the body converts to vitamin A, crucial for healthy vision, a strong immune system, and healthy skin.

Sure, you could head to the supermarket and pick up an overpriced pack of ice lollies or vegan ice creams, but it’s no secret that they’re loaded with sugar and unnecessary ingredients that have little to no health benefits at all. Whereas our recipe is healthy whilst being, flavourful, indulgent and creamy because we’ve used ingredients that are actually good for you!

OUR VEGAN FUDGESICLE RECIPE IS THE PERFECT WAY TO TREAT YOURSELF AND NOURISH YOUR BODY

Servings: 6

Macros (per serving)

200 kcal, protein 7g, carbs 19g, fat 11g

EQUIPMENT NEEDED

INgredients

  • 150g cooked sweet potato flesh

  • 145 ml soya milk

  • 1 small ripe banana

  • 120g peanut butter

  • 60g dates, pitted

  • 20g cocoa powder

  • ¼ teaspoon vanilla extract

  • Pinch of salt (optional)

Instructions

  1. Place all of the ingredients into a high speed blender and mix until smooth. You will need to use the tamper to assist your blender as the mixture will be very thick.

  2. Carefully scoop the mixture into 6 popsicle moulds and place them in the freezer for at least 8 hours to set.

  3. Remove the fudgesicles from the freezer and run a little warm water over the outside of the mould to loosen them.

  4. Enjoy immediately! You can store these fudgesicles in the freezer for up to 1 month.
