High-protein seitan jerky
We love seitan because it is one of the leanest, highest-protein foods on the planet. Our recipe has two stages—firstly, you’ll be making a basic seitan which you can use in stews, curries, sandwiches, or anywhere you’d like a hearty protein boost.
After this stage, you could go on to make delicious jerky that’s highly valuable as a high-protein snack on the go!

Recipe makes 4 servings

188 kcal, protein 37g, carbs 9g, fat 1g
Ingredients (basic recipe):
190ml vital wheat gluten
240ml water
Jerky ingredients
3 tbsp soy sauce
3 tbsp water
7 tsp jerk seasoning
1 tbsp maple syrup (optional)
Method
Boil approximately 2 litres of water in a pan.
Add the vital wheat gluten and water to a bowl, mix, then knead for 2 minutes.
Cut it into 4 equal pieces, then stretch each into a flat disk.
Reduce the pan of water to a low simmer, add the seitan, place the lid on and cook for 40 minutes, flipping halfway.
Remove from the pan and set aside to cool.
To turn the seitan into jerky, preheat the oven to 120°C / 250°F.
Cut the seitan into 1cm thin strips.
Add the soy sauce, jerk seasoning, and maple syrup to a bowl and mix well. If your jerk seasoning already contains salt, swap the soy sauce for an equal amount of water to keep the sodium level down.
Add the seitan slices and mix until well coated.
Spread out in an even layer on two baking trays lined with parchment paper, and bake for 40 minutes. Swap the trays around halfway through to ensure even cooking. If the jerky is still a little soft after 40 minutes, bake for a little longer.
