spicy mango - tempeh lettuce boats
If you’re looking for a new lunch idea that is light in calories but packed full of flavour, we think you’ll love our new Thai-inspired lettuce boats!
Fresh, zesty, and packed with protein, these lettuce boats are a flavour explosion in every bite. The rich, tangy peanut-glazed tempeh pairs perfectly with the vibrant mango salsa for a meal that’s as nourishing as it is refreshing. Lettuce leaves keep it light and low in calories, but for extra fuel, feel free to serve with wholemeal pittas or wraps.

Macros (serves 1)

Ingredients:
Main ingredients
3 tbsp powdered peanut butter
3 tbsp water
1 tbsp tamari or soya sauce
1 tsp maple syrup (optional)
1 tbsp lime juice
100g tempeh, cubed small
12 lettuce boats (butterhead, gem or romaine)
Mango salsa ingredients
75g mango
⅓ red pepper
¼ red onion
¼ cucumber
¼ jalapeño, seeded and minced
1 tbsp fresh coriander
1 tbsp fresh mint
½ lime, juiced
Salt to taste
Method:
Preheat the oven to 200°C / 400°F.
In a bowl, mix the powdered peanut butter, water, soy sauce, maple syrup, and lime juice.
Add in the tempeh cubes and mix until well combined. Add to a baking tray lined with parchment paper and bake for 20 mins, flipping halfway.
Chop the mango, red pepper, onion and cucumber. Then finely chop the jalapeños, coriander and mint. Combine everything in a bowl, then add the lime juice and a touch of salt (optional).
Fill the lettuce boats with the peanut tempeh and mango salsa, then serve.
