high protein vegan breakfast sandwich
If you’re anything like me, breakfast is usually something quick, easy, and on the lighter side — a smoothie, a bowl of porridge, something sweet and simple that you can throw together without much thought.
But every now and then (especially at the weekend for me), that’s just not what hits the spot.
Sometimes, what you really want is something savoury!
That’s where our newest creation comes in.
This is my take on a classic fast-food breakfast muffin — but made completely plant-based and with a much more nourishing twist. We’re talking a soft roll layered with a homemade vegan egg patty, crispy plant-based bacon, and juicy vegan sausages… everything you’d want from a breakfast sandwich, just made in a way that actually supports your goals and doesn’t harm animals.
And the best part? Each sandwich packs an incredible 33 grams of protein, making it a genuinely satisfying, muscle-friendly option that will keep you full for hours.
The “egg” layer is made from a base of tofu, blended with simple, wholesome ingredients to create that classic texture and flavour — but without any gross ovulations!
And when it comes to the sausages and bacon, you can absolutely make this your own. Go with your favourites, but if you can, I’d recommend choosing options that are lower in oil and salt.
Now let’s get to the recipe…
Macros per sandwich (makes 3)
428 kcal, protein 33g, carbs 41g, fat 11g
Ingredients:
6 Linda McCartney rosemary & red onion sausages (or your favourite brand)
6 rashers of This Isn’t Bacon (or your favourite brand)
3 wholegrain rolls
Ketchup
Lettuce
Large tomato slices
‘Egg filling’
150 g tofu
100 ml soy milk, unsweetened
4 tbsp cornstarch
2 tbsp nutritional yeast
½ tsp garlic powder
½ onion powder
½ turmeric
½ tsp paprika
1 tsp baking powder
Method:
Preheat the oven to 200 degrees Celsius/400 degrees Fahrenheit.
To a blender, add all the ‘egg filling’ ingredients and mix until smooth.
Transfer to a small dish (approx 5 x 8 inches) and bake for 20 minutes. Remove from the oven and allow to sit for 10 minutes.
Meanwhile, cook the sausages and bacon.
Slice the egg filling into 3 strips and add it to the rolls along with the lettuce, sausages, tomato, bacon and ketchup.
Serve and enjoy!
